Hi Jonathan,

There're some setting for via, generally if your question is about how to connect Via from top to bottom, you can just select Place >> Via.
it will automatically connect top and bottom layer. for via size, you can set it from design rule and "preferences".
to set new via options from "favorite Via size" when you hit "shift+V" you can add it from "Favorite interactive via sizes" in "Preferences"
for blind and buried via, you can configure it from "layer stack manager".

Regards

Interesting to note. I normally don't need to place VIA's as simply changing to the other layer pair causes a VIA to be place but recently I wanted to place some vias between 2 polygons on either side of the board and have them connect. I had to edit each via in turn to assign a net.

Is there an easier way to place multiple via's in this instance and automatically have them assigned to the net that they are connected to?
